here's a good one.

3 pounds of potatoes. thin skinned or peel them. cut in half maybe, depending on size, par-boil for about 7 minutes.
cool.
cut each potato half into quarters so that you end up with a bite sized potato wedge. like a french fry.

into a food processor, add:
a stick of melted butter. 1/3 cup of extra virgin olive oil. about half a bunch of parsley. a few green onions. a clove of garlic. a little black pepper. 1/2t salt.
whiz it up fine.

mix the goop with the potatoes, arrange into a jelly roll pan in a single layer.

bake at 350 for 90 minutes, turning them every 15 minutes.

warning: deadly potatoes.
