i have to put a real recipe in a thread with a title like this.

pound of cod, cut into half inch slices. maybe three bites per slice is the size you are going for.
1 cup of finely chopped walnuts or pecans or almonds or cashews or whatever.

into a bowl, mix:
3/4 cup of grated parmesan cheese or aged asiago. high quality cheese is a must, not the pre-grated corn meal crap.
2 tablespoons flour

into another bowl, beat one egg.

melt 1 tablespoon of butter and one tablespoon of extra virgin olive oil into a 9x13 baking pan.

preheat the oven to 350.

dip the fish strips into the egg, then into the cheese. lay them into the pan. turn them over once to get the oil everywhere. sprinkle with nuts.

bake for about 18 minutes.


it's way better than batter fried fish. you'll want to serve it with lemon and fries or however you usually eat fish and chips.
