Got home today with my girl... not much food in the house... had one of those "Hmmm... what can I make with what is here?" a.k.a. pantry scavenger meals... but it turned out really good so I will share it here.

Here is what I had to work with:

- Found a pack of fresh uncooked cheese ravioli in the back of the fridge.
- Found an unopened jar of sun dried tomatoes that had expired last September.
- Packets of Parmagian cheese that came with a pizza I ordered last week.
- Can of sliced black olives.
- Olive Oil
- Isha threw a bunch garlic cloves in our freezer a few weeks ago, and somehow they had migrated down to the fridge... they looked kinda yellow & funky, but I knew they weren't too old, so why not?

1st
Boiled the Ravioli to al dente, then strained it and set it aside.

2nd
Crushed the 6 of those funky looking garlic cloves and fried them up on low heat with about 1/4 cup of Olive Oil.

3rd
When the Italians first dried tomatoes in the sun and packed them in oil, did they have an expiration date? I didn't think so! Opened that jar up, and sliced those babies into 1/4" square pieces - once the garlic cooking in the olive oil was dark brown, I added the chopped sun-dried tomatoes - let it all cook over low-ish heat for about 10 minutes while I got distracted by my daughter.

4th
Added in the cooked ravioli to the pan... let it all fry together for about 3 minutes.

5th
Added about 3oz of sliced olives & 3 packets of the Parmagian cheese... let everything fry for about another two minutes... and serve!!!

Turned out really great... my wife said it is one of her favorite things I have ever cooked!

:)

Those put together meals are the best. :)
